Vegan Chunky Ice Cream

  • 3 cups/ 750ml Dewfresh Soy milk
  • ¾ cups/ 180ml Peanut butter
  • 2T/ 30ml Liquid sweetener of choice (optional, milk is sweetened)
  • ¼ cup/ 60ml Dried banana
  • ¼ cup/ 60ml Roasted peanuts
  • 50g Dark chocolate (roughly chopped)

1. Whisk together milk, peanut butter and sweetener (if you are using sweetener).

  • If you have an ice cream machine, pour the mixture in and churn according to manufacturing instructions.
  • Once the ice cream is churned, mix in banana, peanuts and dark chocolate.
  • Serve immediately or freeze for an hour or two for a firmer texture.

2. If you have a high-speed food processor or blender, carefully pour the whisked ingredients into ice cube trays and freeze overnight.

  • The next day blend frozen cubes until smooth and creamy. Mix in banana, peanuts and dark chocolate with a spoon.
  • Serve immediately or freeze for an hour or two for a firmer texture.
